Chunky Blue Cheese Dressing

This is my new favorite dressing. I had previously been on a Ranch Dressing kick, but now, it’s completely T. Marzetti Chunky Blue Cheese Dressing. Which I find slightly amusing, because I have never been a fan of blue cheese. However, this dressing is quite flavorful, yet quite subtle. Even with some chunks of blue cheese in it, I don’t find it overpowering in the least. It’s a wonderful dip for chicken wings, a nice spread on a sandwich, and even a nice ’sauce’ for cold pasta. It’s my new go-to goodie.

First Salad…

First Salad

Last night, I made our first salad for the season. The first salad, that is, where the ingredients are fresher… The first salad where the weather has been warm enough to bring out a craving for a cool, crunchy salad… The first salad where I can realistically look forward to the local farmers market opening and being able to use truly fresh and local ingredients… ‘My First Salad’, of the season, anyway. The pic above may look tomato-heavy, but that’s just because it hadn’t been properly tossed yet. ;) Oh, and I, not previously a fan of blue cheese, was presented with a new brand of blue cheese dressing, courtesy of D., and I must say, I kind of absolutely adore it. :)

Ingredients:

  • Romaine Lettuce
  • Red Onion
  • Green Onion
  • Tomatoes
  • Artichoke Hearts
  • Turkey-Bacon Slices
  • Avocado
  • Brick Cheese Chunks (not shown, because they weren’t added yet)
  • Yummy Blue Cheese Dressing (not shown, for same reason as above)

Let the salads begin!

Hummus

I made some hummus Wednesday night, along with some falafel. It had been awhile since I made any hummus, but I have to say, it was pretty tasty. Unfortunately, I didn’t use any particular measurements with it… I wung it. I’ve found that, when making hummus, tasting it along the way, and adjusting the ingredients as needed, is the way to go. Here’s what is in it:

  • Chickpeas, rinsed
  • Tahini
  • Olive Oil
  • Garlic, minced
  • Soy Sauce
  • Lemon Juice
  • Cumin

Put all ingredients in the food processor and whirl away. I wish I had some ratios to give, but I don’t. Not for this one… You’ve got to taste it and test it and take it from there. But, when you find it, it’s really really good… ;)

Lasagna Ingredients

A delicious lasagna, filled with fillings, stuffed with stuffings galore! Above are a few of the mixtures that make up some of the various layers to this layerful lasagna. This will (probably) be my last wintertime meal post for this season. I just had to get these pictures up, before we really jump into spring… It’s not really cold tonight, but it is rainy.

Salad Season!

There’s something about salads in the winter… it just doesn’t seem like the right thing to do. Unless, perhaps, someone else prepares one for me. For a good salad, I think that the vege’s should be fresh. Of course, they should always be fresh, but I mean more obviously fresh. Like from the spring and summertime. That’s just how my mind works… The above pic is a salad from a previous season. :)

So, we are getting close to salad season, and I am excited about that. As the days warm up, the meals cool down. We’re finishing up on the winter’s casseroles, super-cheesy dishes, heavy creamy things and such. The time for lighter fare is coming… with fresh asparagus (here already!), fresh tomatoes, basil from the deck planters, etc. More rice and legumes in place of pastas and creams (although I can almost always be in the mood for some sort of pasta or another…) I tend to a small container garden on the deck in the summertime. The garden centers are opening and spring is definitely in the air. I’d have some herbs growing in the house too by now, if it weren’t for the darn cat. ;) Darn cat.
