Sometimes, it just feels right. Tonight’s dinner consisted of a salad and some steamed veges. Basically, I knew I had salad fixings in the fridge, and also some veges that needed eating, so we had at it. After dinner, D. said that the meal felt really good to him… made him feel better. Sometimes, I do think some greens or an extra-healthy meal is what our bodies need. I know that I can feel it sometimes when I am needing one. It made me glad to have fixed something tonight that he needed, even if he didn’t know it beforehand. We topped it off with some orange sherbet for dessert. Oh, and I had my first glass of peach iced tea for the season. Cuz, really, it is iced tea season now…
Salad ingredients:
Romaine Lettuce
Green Onions
Cucumbers
Roasted Red Peppers
Hard-Boiled Eggs (whites only) – those were a new addition to my salads, something I haven’t had in there in a long time, but I’d been thinking about it. Plus, we had the eggs.
Turkey Bacon
Garlic White Cheddar Cheese Chunks
Steamed Veges:
Broccoli (I always misspell this word… never learn)
Green Zucchini
Carrots

I found these pretty huge mushrooms during our first trip to the local farm stand over the weekend. They were so big, you really couldn’t not make stuffed mushrooms with them. I wung it with the stuffing, and it still turned out pretty darn good. Note to self—>the toaster oven is too short to use when attempting to cook food items that stand fairly high.
Thanks to D.’s nose for catching them before they were too burnt to save…

Here is my new basil plant that I got yesterday. I did grow some basil last year also, in a container with some other herbs. The basil did OK, but it never really took off. I’m not sure if it needed more sun, or if it was too crowded in there. This year, I’ll going to let this one grow by itself, at least for awhile. It smells absolutely wonderful, and I’ve already chopped up some leaves with dinner last night. Basil… Yummm! I love being able to go outside and snip off some fresh leaves to use in the kitchen. Absolutely love it!

We went to the local farmer’s market today, and the above asparagus is just some of the bounty that we found. We also found tomatoes, mango, green onions, broccoli, mushrooms, and pears. I also picked out some flowers, and a nice pot o’ basil too. I just love that place…

We have company coming tomorrow night, so of course, there will be food. D. has already started doing his share… He took a day off today, for a variety of reasons, but some kitchen play was one item on his agenda. He made his famous pasta salad and his also famous blueberry bars (see above).
I’ll be making some hummus tomorrow, along with some chicken/salsa/cream cheese empanadas.
The Menu:
- Cold Pasta Salad – a yummy blend of cheese tortellini, roasted red peppers, artichoke hearts, garlic, mushrooms… perhaps some onion and some other goodies. I’ll have to wait to tomorrow (or later tonight) to sample it.
- Homemade Hummus – we opted for blue corn tortilla chips to go with it
- Cheese and Crackers
- Raw Vegetables, with a homemade onion dip
- Chicken Empanadas… so simple to make, really. Cook up some chicken breasts. Cube and warm again with salsa and cream cheese. Additional vege’s optional. Wrap in Pilsbury-type biscuit dough and cook. I like to add garlic and mushrooms to the mix, no surprise there.
- Blueberry Bars
And whatever else we may come up with for the weekend. We’re looking forward to it.

We had some apple slices with peanut butter as a 9:30pm snack last week. We were already in bed by that point, which is early for us. But it was a perfect bedtime snack! Something like that would be nice right about now, too…
