Rice and a Wrap…

Rice in a Wrap

I threw this dish together Tuesday night. I was feeling the need for something whole-grainy, so a Brown Rice something was the way to go. I get like that sometimes, after not eating enough “earthy” things… that’s perhaps the best way to describe it. I get a hankering for brown rice or nuts bulghar wheat, for whatever reason. In going through some of my older posts earlier, I was reminded of this dish, so I did a spin off with what I had readily available. I was going to add some beans to it, but simply forgot.

  • Brown Rice
  • Tomatoes
  • Green Onions
  • Cheddar Cheese, cubed
  • Olive Oil, drizzle

D. decided he was going to have his in a wrap, so I did too, with a lil bit of dressing. It was simple, tasty, and exactly what I needed! My body must have been needing the whole grains… I get that way with veggies also, if I haven’t been eating them enough.

“Homemade” Pizza…

I had been wanting to make a pizza at home… So, I did a quick one Friday night and it came out tasty and easy. I do want to experiment with making my own pizza dough, but for now, I opted for Pilsbury’s. For the toppings, I used the traditional (traditional for here, that is) mushrooms and garlic. Instead of a tomato-based pizza sauce, I used the remainder of a jar of Red Pepper Cheese Sauce. Then added some Shredded Cheddar Cheese and voila! I probably could have pulled it out of the oven a couple of minutes sooner, but still, the cheese was only slightly browned, which isn’t necessarily a bad thing.

In the past, we’ve used Boboli pizza crusts with a variety of toppings, such as sun-dried tomatoes, roasted red peppers, artichoke hearts, chicken… But for Friday, I wanted something quick and easy. I’d like to soon find a good pizza dough recipe and have batches ready to use from the freezer. I can picture myself trying calzones-of-sorts and other stuffed dough dishes too. So, I’ll call this a start… ;)

Stir Fry in Blue Bowl

So, I had already made some Brown Rice, which I like reheating in some Sesame Oil by itself before adding the veggies. If nothing else, it saves me one burner and one pot when I do the dishes, so I prefer having it made ahead of time.

For this dish, I steamed the carrots separately… D. likes ‘em mushy. I cooked everything else gradually in a saute pan, and then kept it covered while it finished cooking, after tossing the carrots in. The seasonings were the Sesame Oil and some Soy Sauce. Oh, and Fresh Ginger… I forgot how much I like cooking with that. This morning, I tossed in some leftover beef and we’re calling it lunches. Here’s the complete list of ingredients, in order of how I tossed it all together:

  • Sesame Oil
  • Garlic, minced
  • Fresh Ginger, finely chopped
  • Red Onion, chopped
  • Mushrooms, sliced
  • Yellow Squash, quartered
  • Yellow Pepper, chopped
  • Red Pepper, chopped
  • Soy Sauce
  • Green Onion, chopped
  • Brown Rice

It was fairly quick and easy, especially since the Rice was made earlier. Quite tasty!

Balinese Vegetable Soup Variation

This recipe here is the exact one from my ‘Soup’ cookbook, although it doesn’t reference at all its origins. I try to note where I find the recipes that I use or adapt, particularly when they are from a specific cookbook. Anyway, my recipe below is a variation on the recipe in the link, and there are some things that I am going to try differently next time, too. Next time also being when we next reheat the remaining soup… :) This is how I made it:

  • 8-10 oz. Green Beans, chopped
  • 1-1/4 qts. Boiling Water
  • 1 can Coconut Milk
  • 2 Garlic Cloves
  • Olive Oil
  • 1/2 Red Onion, chopped
  • 10-12 oz. Mushrooms, sliced
  • 1 can Baby Corn, halved
  • Red Pepper Flakes
  • Green Onions, chopped
  • 1-2 Tbsp. Lemon Juice
  • Salt

1. Cook the green beans in salted water for 4-5 minutes. Remove beans and return water to soup pan. Add Coconut Milk to water.

2. Chop Sliced Almonds in a food processor and set aside. Heat oil in a saute pan. Add Mushrooms and Red Onions, cooking for 6 minutes. Add processed Almonds and Garlic, stirring for a few minutes. Add Red Pepper Flakes, Green Beans and Corn, stirring again to mix and heat through.

3. Add veggie mixture to water and coconut milk. Bring to a boil, lower heat and simmer for 15-20 minutes. Add Green Onions and Lemon Juice. Serve.

Verdict: It was a tasty enough soup. We liked the coconut milk in there, along with the red pepper flakes. The soup was a bit watery, which may be due to the fact that I didn’t measure my water. We’re thinking that adding some Peanut Butter would be a good addition, both adding some flavor and thickening the soup a bit.

I’ll have to try some more recipes with these flavors (coconut milk, in particular) because we do like them. We generally like thicker, creamier soups, and that is was D. was expecting. So while we liked the tastes, I’ve got to work on adjusting the texture. Perhaps also throw some chicken in there… I’ve had this one with tofu before. I’ll be playing with this a bit in the future.

Lentil Feta Yellow Tomato Salad

Yes, I made this salad once again. It really has become a lunchtime favorite around here. I had the last batch of Yellow Cherry Tomatoes… I also had some feta with no particular destination, so this was it. The yellow tomatoes actually have a sweeter flavor than “regular” red tomatoes… they are not as acidic. Both D. and I noted that separately, even. :) Anyway, I’m feeling lazy this evening. I’ve got my soup post to post still. I do hope to get that up tomorrow.

Thursday night, a chilly night, after work some running around… I went to the store, primarily for Puggles’ food and a few other things. I also ended up looking for a Wii Fit, which was not there that night, even though we had seen some the previous weekend. Then, a phone call to a game store, and upon finding out a Wii Fit was there, we ran out again to pick it up. So, upon finally getting home (again), what to do for dinner?

We had some eggs remaining from some baking… we don’t always have eggs in the house. However, we are finding that it’s a good ingredient for a quick meal during the week, so I’m thinking we’ll keep some on hand more frequently now. Milk, too. We’re odd like that… what some may consider staples for the fridge, for us it’s hit or miss. Anyway, we also had some leftover ham, so here comes dinner! I would consider cheese to be a staple for us, that’s something we always have in the fridge, in one form or another. :)

  • Leftover Ham, chopped into squares
  • Eggs
  • Garlic, minced
  • Shredded Cheese
  • That was it, pretty straightforward. I can’t recall if I used any seasonings in this dish… perhaps some Onion Powder. I think I did put a dash of Soy Sauce into the eggs, which I a trick I learned some where along the way, many years ago… We toasted some Cheesy Bread to go along with it, and voila, quick and comfy dinner!

Celebration!!

We indulged in some Celebratory Champagne on the evening of November 4th. It just felt like the right thing to do. :) And yes, we were hopefully prepared for it. We don’t normally drink during the week, but this was definitely a special occasion! Congratulations President-Elect Obama, and thank you. You have given us hope for our country…
