It was pretty much a non-cooking weekend. We had turkey and cheese sandwiches for dinner on Friday… we just weren’t in the mood for much of anything. I did get the grocery shopping done Saturday morning. Then, we went on an overnight trip for Saturday, so no cooking to be done there. I had a Buffalo Chicken Wrap for dinner. Again, nothing too exciting. And for tonight, it was a cheesy bagel. It was a warm weekend, so I think that has contributed to our lighter appetites. All fine by us.
Here’s what’s on the menu for the week:
- Pork Tenderloin with potatoes and a vege. There’s a Pork Skillet dish that I make, that is really yummy. I usually make it the day after, but I may just do it this way to start. It’s a smaller pork this time, and the dish includes pork, potatoes, mushrooms, broth, green onions, Worcestershire sauce, flour… I’ll post the recipe when I make it.
- Some sort of enchilada -type of dish
- Some sort of pasta dish – perhaps with sun-dried tomatoes, artichoke hearts, parmesan cheese. Oh, I found some fresh basil at the store too… I’ll definitely be adding that!
- Turkey Burgers, with some fresh chives thrown into the mix.
That’s the skinny for this Sunday evening’s food and cooking post. We’re currently watching Iron Chef America , where the secret ingredient is tomatoes. There’s a polenta dish that is looking yummy. Almost time to see what exactly everyone ended up cooking, so hopefully we’ll catch some ideas for future kitchen fun!
