I don’t know what it is, but I just can’t get motivated to actually cook much lately. I think part of it is due to the weather, as much as that might sound like a psychological justification for it. 😉 But, it’s been warm, then cool, and then back around again, within days, the day even. My new work environment tends to be like that too, either getting quite (uncomfortably) warm and stuffy, then very cool almost cold with the AC on. Where’s the consistency, eh? 🙂
But, D. and I did go grocery shopping tonight after work, which was good. It actually got my mind thinking about being in the kitchen again, too. AND, I got salad fixings. I have a hunch that I may just need to throw together a kitchen-sink salad, the first one of the warm-weather season. See, when I don’t cook, per se, I’m also not getting enough vege’s and grains… That’s the way it goes. I end up with too much starch and carb’s, which tend to spike and plummet my blood sugars. More protein, more protein… I’ve just started nibbling on walnuts in the late morning at work, which helps tremendously, for the tiny nibbles that they are. Cottage cheese is another lil something something that I’ll start bringing also.
So, for dinner tomorrow it will either be a big salad or a whole wheat pasta with vege’s. I’ll toss some turkey bacon in either meal, too, cuz I can.
