We have company coming tomorrow night, so of course, there will be food. D. has already started doing his share… He took a day off today, for a variety of reasons, but some kitchen play was one item on his agenda. He made his famous pasta salad and his also famous blueberry bars (see above).
I’ll be making some hummus tomorrow, along with some chicken/salsa/cream cheese empanadas.
- Cold Pasta Salad – a yummy blend of cheese tortellini, roasted red peppers, artichoke hearts, garlic, mushrooms… perhaps some onion and some other goodies. I’ll have to wait to tomorrow (or later tonight) to sample it. 🙂
- Homemade Hummus – we opted for blue corn tortilla chips to go with it
- Cheese and Crackers
- Raw Vegetables, with a homemade onion dip
- Chicken Empanadas… so simple to make, really. Cook up some chicken breasts. Cube and warm again with salsa and cream cheese. Additional vege’s optional. Wrap in Pilsbury-type biscuit dough and cook. I like to add garlic and mushrooms to the mix, no surprise there.

And whatever else we may come up with for the weekend. We’re looking forward to it. 🙂
