I threw this dish together Tuesday night. I was feeling the need for something whole-grainy, so a Brown Rice something was the way to go. I get like that sometimes, after not eating enough “earthy” things… that’s perhaps the best way to describe it. I get a hankering for brown rice or nuts bulghar wheat, for whatever reason. In going through some of my older posts earlier, I was reminded of this dish, so I did a spin off with what I had readily available. I was going to add some beans to it, but simply forgot.
- Brown Rice
- Green Onions
- Cheddar Cheese, cubed
- Olive Oil, drizzle
D. decided he was going to have his in a wrap, so I did too, with a lil bit of dressing. It was simple, tasty, and exactly what I needed! My body must have been needing the whole grains… I get that way with veggies also, if I haven’t been eating them enough.
