I did have some early pictures of the Corn Chowder I made over the weekend. However, as the soup simmered further, it really thickened up! Hence, I scrapped the early pics and have yet to get the others here. It’s a good and tasty and thick soup. D. says he really likes it. It’s, well, corny! 😉 That was the whole point. It’s also got carrots, onions, peppers, potatoes and probably something else I’m forgetting in it. More of a corn-vegetable-potato chowder type of soup. I find it tasty enough, though I’d much prefer a mushroom base. That’s just me… 🙂
I made some BBQ Cajun Shrimp over brown rice also. This dish was primarily for me… To feed my seafood hankering every now and again. Except I didn’t mix it well enough the first time I had it, so the spices were a wee bit hot for my tastes. After proper mixing, I enjoyed it more. It was also darn good for lunch today, cold.
D. made some excellent ‘Pita Sandwiches’ last night. Toasted pita breads with cream cheese, roasted red peppers and turkey slices in between, warmed to perfection. They were quite yummy… quick and easy too!
Tomorrow night is the Cookie Fest… Nine dozen cookies for an exchange at work. I have to say, though I’m looking forward to spending the evening baking cookies, I’ve soured a bit on the event itself. The organizer did give us all plenty of notice… about five or six weeks worth. However, she just today asked me ‘If I heard…’ I guess they want to get together after work to exchange goodies and sort of happy hour it. Not bad, but not good when one has planned for other things. They can be very last-minute there, and this is just another example. Oh well… I’m not sure if I’ll make it there, but I’ll still gladly bake and give out some treats.
